Bavarian Potato Salad - Kartoffelsalat





 Potato salad is a dish made from boiled potatoes, the versions of which vary throughout different regions and countries of the world. Although called a salad, it is generally considered a side dish, as it usually accompanies the main course.It is generally considered casual fare, and as such is typically served at picnics, outdoor barbecues, potlucks and other casual meals and events.

The version of tis recipe is from southern Germany, more exactly from the Bavarian region where its caled " Erdäpfelsalat " .

Cook Time: 25 minutes


Total Time: 40 minutes

Servings: 4

Ingredients:

Boiling potatoes - 2 pounds
Hot beef or chicken broth - 3/4 cup
Onion, chopped finely - 1
Oil - 1/3 cup
Vinegar - 1/4 cup
Mustard - 2 tablespoons
Sugar - 1 tablespoon
Salt and pepper - to taste
Chives or parsley, chopped - 1 to 2 tablespoons

Method:

 Place the potatoes in a medium-size pot and cover them with enough water to extend 2 inches above the surface of the potatoes. Salt the water and bring to boil over medium-high heat. Continue cooking until potatoes are tender when pierced with a fork, about 15 to 20 minutes.When the potatoes are cool enough to handle, peel them and then cut them into thick slices. Put the potatoes in a large bowl and carefully stir in the hot broth and onions.
 In a small bowl, whisk together the oil, vinegar, mustard, sugar, salt and pepper until smooth. Stir this vinaigrette into the potatoes, along with the chopped chives or parsley. Serve warm.

 Also you can add fried pieces of bacon.
